Espresso vs. filter roast: a quick guide to the world of specialty coffee

You are standing in front of a coffee shelf or browsing our e-shop and hesitating. Should I get an espresso roast or a filter roast? Is it just marketing, or does it really matter?

Understanding the difference between espresso and filter roasting is the most important step if you want to brew a truly good cup at home. Although both categories can come from identical green beans, the way we roast them at Goriffee radically changes their taste, aroma, and brewing behavior.

What is an espresso roast?

Espresso roasting (often referred to as medium roast and full city roast) is optimized in our roastery for fast extraction under high pressure. Since the preparation of espresso takes only 20 – 30 seconds, the bean must be "more open" and more soluble so the water has time to extract the best out of it.

Typical characteristics for our espresso roasts:

  • Subdued acidity: We roast in a way that softens the fruity acids and highlights sweetness and body.

  • Balance: The goal is a stable flavor that stands out not only in pure espresso but also doesn't get lost in milk.

What is a filter roast?

Filter roasting (light roast) is intended for slow extraction using gravity. Methods like V60, Chemex, or Aeropress use a longer steeping time (2 – 4 minutes), so we don't need to break down the bean as much as for espresso.

Why do we roast lighter for filter?

  • High acidity and vibrancy: We want to preserve the enzymatic compounds that give the coffee its unique character – fruitiness, florality, and freshness.
  • Clarity of flavor: Filters can "dissect" the taste of coffee into subtle nuances.
  • Tea-like character: The body is lighter, less oily, which feels refreshing.

What happens if I use the wrong roast?

You often ask us if you can use espresso beans for filter and vice versa. Technically yes, but the result will probably not please you. The expert portal Perfect Daily Grind often points out that bean solubility is a key variable – and that changes with roasting.

❌ Espresso roast on filter: The resulting cup will likely taste flat, bitter, and "woody". The delicate notes will be burnt, and the typical sparkling acidity will be missing.

❌ Filter roast in espresso: This is thin ice. For the average consumer, espresso from a "light roast" coffee will be extremely sour and astringent. It lacks the solubility needed for a short extraction.
