How to choose specialty coffee for an automatic coffee machine

Erik Šimšík | 5 December 2025

Choosing the right coffee for an automatic coffee machine is still an unclear topic for many. An automatic coffee machine represents a convenient and fast solution used by most households and offices. However, the final taste depends primarily on what beans you pour into the hopper.

Choosing the right raw material is key if you want to achieve an optimal taste experience. At Goriffee, we roast several profiles – from classic espresso blends to light roasts intended for filter. In this article, we will explain how to succeed when choosing coffee beans and what to look out for to utilize the full potential of your coffee machine.

1. What flavor profile are you looking for?

Technologically, automatic coffee machines best process beans that meet specific parameters. You will achieve ideal results with coffees that are:

  • Medium or dark roasted (medium / full city roast).
  • With low to medium acidity.
  • With a flavor profile oriented towards chocolate, nuts, caramel, or gentle natural sweetness.

If you prefer chocolate and more bitter notes In this case, we recommend reaching for coffees like Highlander Espresso Blend or Simply coffee. These coffees are characterized by a darker roast, a pronounced body, and minimal acidity.

If you prefer a sweet-balanced and mild taste choose Brazil Caramelo or Milkyway Espresso Blend. It is a medium roast, pure arabica, which is an ideal choice if you are looking for a milder result without excessive bitterness, but retaining full flavor.

2. Why the roast level is crucial

Roasting fundamentally affects extraction in an automatic coffee machine.

  • Light roast: In an automatic coffee machine, it usually does not perform optimally. Due to the short extraction time and lower temperature (compared to a professional lever machine), the result is often sour, watery, and with a thin crema.
  • Medium roast: A universal and safest choice. It provides good flavor balance, stability, and reliability for everyday preparation.
  • Full City roast (dark roast): Ideal for those who require a stronger, more bitter espresso taste with a pronounced crema.
  • Dark roast: We do not recommend this roast. The beans are often oily, which can clog the grinder and the internal mechanism of the coffee machine in the long run.

At Goriffee, we always state the roast level and the recommended preparation method directly in the description of our coffees.

3. Recommended origin and composition for an automatic machine

Not every coffee growing region is suitable for automatic preparation. Experience shows that the best results are achieved by:

  • South and Central America (e.g., Brazil, Colombia, Guatemala): These regions are typical for sweet, chocolate, and nutty notes that extract well in an automatic machine.
  • Espresso blends: A combination of different coffees designed for a balance of mildness and strength. They are suitable for strong espresso, but also milk drinks like cappuccino or flat white.

At Goriffee, we have mixed the blend for this purpose Milkyway, which is a safe bet for any automatic coffee machine.

4. Characteristics of the ideal coffee for your coffee machine

When choosing specialty coffee watch the following parameters:

  • Roast date: The coffee should be fresh, but not completely "from yesterday". After roasting, a degassing process takes place, so we recommend waiting at least two to three weeks from the roast date before using the beans in an automatic machine.
  • Flavor profile description: Look for keywords like chocolate, nuts, caramel, low acidity.
  • Recommended preparation method: If "espresso / automatic" is stated on the packaging or in the description, you can be sure that the beans are technically suitable for your machine.

6. Common mistakes to avoid

Even the best specialty coffee can taste bad if you underestimate the following factors:

  1. Buying Light Roast coffee: Even if they are high-quality beans, the result in an automatic machine will often be flat and sour in taste. Save these coffees for V60 or other filter preparation.
  2. Ignoring the coffee's intended use: If the coffee is not labeled as espresso / automatic, it probably won't work properly in the machine.
  3. Using old beans: Coffee without a clear roast date or beans weathered by long storage lose their flavor profile and the resulting cup will be dull.
  4. Neglected maintenance: An uncleaned coffee machine is a quality killer. Settled coffee oils and remnants of old coffee will degrade even the freshest batch. Do not forget the regular use of cleaning products.
  5. Unsuitable water: Water makes up most of the beverage's volume. Specialty Coffee Association (SCA) defines strict standards for water, which include correct pH and hardness. For optimal taste and long life of the coffee machine, we recommend using filtered water.
